Ingredients
  

Dough

  • 1 kg Almond Flour
  • 1/2 cup Curd
  • 1/2 cup Water
  • 1/4 tbsp Salt
  • 1/4 tbsp Sugar
  • 1/4 tsp Baking Powder
  • 2 tbsp Refined Oil
  • 2 cup Grated Cheese
  • 1 cup Freshly Chopped Spinach
  • 2-3 Green Chillies (finely chopped)
  • 1 cup Chopped Onion
  • 2 tbsp Freshly Chopped Cilantro
  • Oil for Frying on tawa

Notes

  1. In a mixing bowl take 2 cups grated cheese.
  2. Add chopped onion, green chillies, spinach, salt as per taste. Mix them properly.
  3. Then, Sieve the almond flour in a bowl.
  4. Add curd, baking powder, baking soda, sugar, salt and oil.
  5. Further, add lukewarm water and knead into a soft dough for 10 minutes.
  6. Grease the dough with oil.
  7. Cover and rest for 2 hours in a warm place.
  8. After 2 hours, knead the dough slightly for removing if any air present in the dough.
  9. Take a ball sized dough and make round balls of flour.
  10. Further roll into a smaller circle onto the Parchment Paper with the help of a rolling pin.
  11. Heat a skillet (cast iron or non-stick) over medium/medium-high heat. Once hot, add oil. Then use hands to carefully transfer the dough to the pan. If it cracks, quickly patch back together with your hands (be careful not to touch the hot skillet).
  12. Cook for 2-3 minutes or until the underside is golden brown. Bubbles may form while it’s cooking — that’s normal and good. Flip carefully and cook for another 2-3 minutes. Lower heat as needed to ensure it doesn’t burn.
  13. It’s done when both sides are golden brown. Serve them hot with yogurt or any dip you like.
