Ingredients
  

  • 2 cup Diced Carrot
  • 2 cup Diced Red Bell Pepper
  • 1 cup Zucchini
  • 1 cup Boiled Tomato Puree
  • 1 cup Cabbage
  • ½ cup Fine Chopped Celery
  • 4 cup Water
  • 25 grams Butter
  • 2 Cloves of Garlic
  • 25 grams Pasta
  • 1 cup Cream Cheese
  • Salt according to taste
  • 1 tsp Black Pepper

Notes

  1. Warm butter in a large stockpot over medium heat. Once the oil is shimmering, add the chopped carrot, turnip, celery, potatoes, garlic cloves and add salt.
  2. Cook the vegetables until they get softened and are turning translucent for about 7-10 minutes
  3. Then add water and Tomato puree into it. Season it with freshly ground black pepper. Raise heat to medium-low and bring boil into the mixture, cover the pot with lid for 15 minutes. 
  4. Now add Butterfly Pasta, cabbage and continue its cooking for 20 minutes or until the pasta is cooked. 
  5. Remove the pot from the heat. Taste and season it with salt and black pepper if required. Serve it hot by garnishing it with grated Parmesan cheese.
